Baladi bread, or Egyptian flat bread, is made mostly with whole wheat flour. The dough is flattened, either by hand or machine, into round shapes. The dough is then baked in a wood-burning or gas oven. Bedouin people living in the desert bake a few different types of bread. One type, called tib-bena, is baked by covering the flattened dough with chunks of hot coal, as seen in the photo below.
